Chicken Berry Salad Recipe

I don’t have to tell you that life can get crazy. No matter how much you plan, the day gets away from you. I like making this Chicken Berry Salad for an easy weeknight dinner. It pairs nicely with our other busy night dinner staple, pizza!

With all of the activities going on this summer, I have relied on frozen pizza for some of my family’s dinners. I try to balance my plate with some fruits and vegetables and this chicken berry salad does the trick!

Cheesy Beef Enchiladas

One of my all time favorite foods is enchiladas. I just can’t get enough of them. It is hard to find a good beef enchiladas recipe that tastes similar to what you would get in a restaurant.This recipe is the closest I have found.

I was lucky enough to live close to an extremely good Mexican restaurant when I was growing up. Now that I live in a different city, all of the other restaurants I have tried just don’t compare, and I have tried a lot! I needed a recipe that was similar to what I was craving!

I stumbled across this beef enchiladas recipe from The Pioneer Woman (love her!) and I did tweak her recipe a little to suit my family’s tastes.

Amazing Blueberry Scones

I am a huge fan of the blueberry scones at Panera Bread. I could seriously eat a whole box by myself! I have been on the lookout for a copycat recipe but I couldn’t find one. I stumbled across this blueberry scone recipe from Tyler Florence that looked similar so I had to give it a try.

I’m so glad I tried these because they turned out really good! This was my first time making blueberry scones, or any scone for that matter, so I was nervous about how they were going to come out.

Slow Cooker Chicken Taquitos Recipe

I have been trying to do better with meal planning. It is a big help on busy weeknights. I tried a new taquitos recipe that was so easy to make and something that my whole family loved. This will be going into my monthly dinner rotation, for sure!

My slow cooker makes my life so much easier. I don’t have to scramble around at 5 o’ clock wondering what we are going to eat for dinner. Plus, a slow cooker recipe usually makes a lot of food for my family of 3 so we usually have plenty for leftovers to eat the next night.

Delicious Zucchini Bread Recipe

I have been looking for a good zucchini bread recipe that I can make to use up all of the zucchini from my garden. I found a great base recipe that I tweaked a little to fit my tastes. I was looking for something that would help mask the taste of the zucchini since I’m not a big fan. I’m trying to eat more vegetables but I’m a really picky eater, I wish I wasn’t!

I have never had zucchini bread before I made this and it is now one of my favorite desserts. It should be called zucchini cake instead of zucchini bread because it is so moist and sweet! Even my two year old kept asking for more bread, she loved it too!
