I was born and raised in the South. We love anything fried. I know it is not very healthy but it is sooooo good! I love making Chicken Fried Steak with Country Gravy for dinner. It is one of my favorite meals. Since it is not healthy, I try to only make it once a month but it is an indulgence that I enjoy. I do still love it when my Mom makes this for me. For some reason, her gravy comes out so much better than mine even though I do it exactly the same way! I guess she puts more “love” into it than I do :).
Ingredients:
4 Cubed Steaks
Flour
4 Cups of Milk
salt and pepper to taste
Vegetable Oil
Directions:
For the Steak:
Pour vegetable oil into a skillet or pan, I use enough to just cover the bottom, and heat to about 350 degrees (or Medium -High heat). Rinse off steak and pat dry. Pour some flour onto a plate to coat the steak. Place steak in flour and make sure it is coated all over with flour. Shake off any excess flour, and place steak into skillet. Add salt and pepper to steak and let cook for about 3-5 minutes per side. Make sure to add more salt and pepper when you flip the steak. Once steak is done, transfer it to a plate lined with paper towels to help absorb the oil.
For the Gravy:
Note: I like to make a lot of gravy so we have plenty for leftovers. I make it in a large skillet, if you only have a small pan, you may want to half this recipe.
1) Once the steak is cooked, remove most of the oil, but keep about 2 Tbs of oil in the skillet. 2) Using your spatula, scrap up all of the fried bits of steak that may be stuck to the pan, this gives the gravy a lot of flavor.
3) Add about 1/4 cup of flour and salt and pepper to the skillet. 4) Stir and let cook for 1-2 minutes. 5) Add 3-4 cups of milk (depending on how much gravy you want) and turn the heat up high. I usually add more salt and pepper and stir. 6) Let cook until it reaches desired consistency, usually around 5-10 minutes. I like to stir it often so nothing sticks to the pan.
It is a really easy recipe and is a perfect Southern meal. We usually have rice and green beans with our Chicken Fried Steak but make whatever will complete your meal. I love pouring the gravy over rice, I could literally eat just that for a week straight! I love that this meal doesn’t cost a lot to make either. You can usually find cubed steak on sale very often. My daughter and I were just talking last week how you never see the food networks making gravy. We believe it’s because, to those who don’t make it, that it doesn’t look pretty in the beginning stages. And it’s not exactly healthy, is it? But it is good.
