My favorite vegetable, especially during the summer, is corn! I love making Roasted Summer Corn as a side dish for dinner. It is so easy and delicious. This is really good when you use fresh corn on the cob straight from The Farmer’s Market. This is probably one of the easiest recipes I know of which makes it perfect for those lazy summer nights! So, without further ado, here is my Roasted Summer Corn recipe.
Ingredients
- corn on the cob ( I normally make 4 at a time)
- butter
- salt and pepper
Directions
Heat the oven to 400°F. Line a baking dish with aluminum foil. I used my 9 x 13 Pyrex dish (affiliate link). Place the corn onto the foil lined baking dish. Add salt and pepper on all sides, however much you like (Tip: I did run my corn under some water to get it damp so that the salt and pepper would stick better). Smear about a pat of butter over each ear of corn.
Place in the oven and let it cook for about 30 min. You will want to turn the corn every now and again while it is cooking. Once it is done, add some more butter to the top and enjoy!
This recipe is so simple and yet so delicious. It really is just a basic recipe that you can make your own. I might try adding Parmesan cheese or garlic salt to them next time. The possibilities are endless. I hope your family enjoys this Roasted Summer Corn as much as mine does.
