I came across this yummy recipe for Grilled Honey Dijon Chicken the other day. I needed something quick and easy that would use up some of the food in my freezer. This recipe is courtesy of Sunny Anderson, I love her! She has some really delicious recipes that you should check out on The Food Network. This recipe turned out really great and it had a lot of flavor. I would make extra marinade next time to set aside so it can be used as a dipping sauce.
Grilled Honey Dijon Chicken
Ingredients
- 2 Tbs. honey
- 2 Tbs. dijon mustard
- 1 Tbs. extra-virgin olive oil (plus more for the grill)
- 1/2 Tsp. of salt
- black pepper
- 4 butterflied boneless, skinless chicken breasts
Directions
In a small bowl, add the honey, mustard, 1 tablespoon of oil and salt and pepper, to taste. Mix well with a whisk and put the mixture into a large plastic resealable bag. Add the chicken, seal the bag and shake to incorporate.Refrigerate at least 2 hours, I let mine marinate overnight.
Preheat grill to medium heat. I actually used my grill pan that I love and made this in the kitchen. Place the chicken on the grill or grill pan and cook until a nice crust forms on both sides, about 4 to 5 minutes per side. Let the chicken rest on a serving platter for 10 minutes before serving.
