I’ve been trying to get more fruits and veggies in my diet. I’m pretty picky when it comes to the veggies but I am trying to expand my palate and try new things. Spinach is one of those foods where sometimes I like it, sometimes I don’t. I tend to like it in salads over it being cooked. Since it is so good for you and full of nutrients, I’ve been trying different ways to eat it. I came across this Chicken Spinach Casserole recipe and decided to give it a try.
Chicken Spinach Casserole:
Ingredients:
1/2 cup Mayonnaise
1/2 cup fat-free sour cream
1/2 teaspoon garlic powder
pinch of black pepper
1/3 cup grated parmesan cheese
1/4 cup shredded mozzarella
2 cooked chicken breasts
10 oz frozen spinach, thawed and drained.
Directions:
Preheat oven to 350°F. Spray a 9 X 9 baking dish with cooking spray.
Combine Mayonnaise, sour cream, garlic powder, pepper, Parmesan cheese, and shredded mozzarella in a medium bowl.
Toss 1/3 of the sauce with the chicken and spinach in another bowl. Add this mixture to the baking dish.
Pour the rest of the sauce mixture over the chicken and spinach
Bake, uncovered, 40 minutes or until top is golden brown.
Optional: Sprinkle extra mozzarella on top and let melt during the last 5 minutes of baking.
I liked this dish and it was pretty simple to make and it was even good as left overs the next day. It still isn’t my favorite way to eat spinach though. I will have to keep looking :).

Looks good. I bet you could also do it on the stove top, but in the oven you get that nice crust on the cheese. Yum. I do like spinach in something like this, it gives it good flavour and Kale is good too.

WHAT??? You don’t like Spinach? I LOVE SPINACH – in fact it is one of my favorite foods – I probably eat it at least five times a week. But I’ll let you in on a little secret: FRESH SPINACH is like 10,000 time better than frozen – whether your using it raw in a salad or LIGHTY cooked (DO NOT OVER COOK or it’s will be bitter.
You can steam /sauteed fresh spinach in a covered pan in a matter of minutes – season it with a little buter or oilve oil, garlic S & P.
But I have to agree – when you’re using frozen – which IS a lot cheaper, faster and easier – it always helps to either use it sparingly in a soup, stew, dip or specialized appetizer recipe. If you’re going to feaute it in a recipe like this one (and this is a good recipe) it’s always best to SMOTHER it in melted cheese! I happen to think that melted Cheddar is the best choice (even kids seem to like it!) But I also like it Greek style – with melted Feta. Yum
